Chicken and Cheddar Cream Cheese Spread Featuring Ecce Panis Bread #FamilyMeals

Now that I’m back at work again I need quick and easy lunches especially for the days that I work doubles and get about an hour or two break before I have to be back at work again.

Today when I headed to Walmart I made sure to pick up some things that would make that possible for days like today! First I picked up some Ecce Panis Ciabatta Bread

I had never heard of this Ecce Panis before but I love that you bake it at home, there’s something about baking your bread at home that I just love. They also have French Dinner Rolls that would be perfect for your #EasterMeals!

I also picked up some cream cheese and cheddar cheese for the spread I was going to make. It’s ridiculously simple and delicious and it takes no time at all to prepare!

Chicken and Cheddar Cream Cheese Spread

Ingredients:

4oz of Shredded Chicken (I used left overs)

4oz of Sharp Cheddar Cheese

6oz of Cream Cheese

Directions:

Shred 4oz of Chicken.

Grate the 4oz of Sharp Cheddar Cheese.

Add the chicken and cheese to 6oz of cream cheese.

Spread over Ecce Panis Ciabatta Bread and ENJOY!

It really can’t get much easier than that! It’s best when you spread it on the Ciabatta bread fresh from the oven. Nom. I want some more right now! Too bad B and I devoured the bread already! We have plenty of spread left over so we’ll have to go get some more bread to spread it on!

Bacon and Cream Cheese Won Tons

These Cream Cheese and Bacon Wontons were so easy to make I can’t even comprehend wh I haven’t made them before. I guess it’s because I didn’t realize that you can get the wonton wrappers in your local grocery store. Did you know that you could do that? Well I do now and I can tell you that while this was the first time I made Wontons it certainly won’t be my last! 

First and foremost you want to open up two packages of Cream Cheese (8oz) and let it soften while you cook up the bacon! 

Next up is making the bacon!

Then you gotta flip it, make sure it’s nice and crispy! 

When it’s all done drain it and lay it out to chop it up! 

Now that the cream cheese has softened you want to add the chopped up bacon to the cream cheese! 


So now you’re done with the filling, pretty easy huh? 

Filling the wontons is even easier! My suggestion is to fill them all up and then fry them in batches! This recipe makes 50 wontons which is how many comes in the package! These are the kind I got!

I laid them all out flat on a cutting board and put a teaspoon of mix in the middle of each won ton. 

To seal you dip your finger in water and swipe along two edges of the won ton and take the corner of the edges that aren’t wet and bring it across to the other corner and seal by pressing down! 

You can also make it ravioli style by wetting all four edges and placing another won ton wrapper on top like this:  
Either way you decide to make your won tons you want to heat the oil on low to medium heat and have the won tons spend approximately 3-4 minutes on each side! 


Any longer and it gets a little crispy…see?



But I quickly got the hang of it and they were coming out sooo good! 



Bacon and Cream Cheese Won Tons

Ingredients: 


Won Ton Wrappers
2 – 8oz Packages of Cream Cheese (softened)
120x Bacon 
Vegetable Oil (for frying)


Directions: 


1. Unwrap two 8oz packages of cream cheese and allow to soften while cooking your bacon until crispy. 
2. After your bacon is cooked drain the excess grease and chop into small pieces. 
3. Combine Bacon and cream cheese
4. Lay out your won ton wrappers and fill each with approximately 1 teaspoon of the bacon and cream cheese mixture. 
5. Seal by dipping your finger in water and running along to connecting edges. Meet the corners and seal! 
6. Heat vegetable oil on low to medium heat place won tons in the oil for 3-4 minutes. Flip and repeat until all won tons have been cooked. Place finished won tons on a paper towel to drain the excess oil.

Homemade Onion Rings



The other day we had a couple of friends over for a small cookout I had gotten an onion for people who like onions and apparently that meant only B because I left with almost a whole onion. I knew it would go bad if I didn’t act quickly {just like the bananas that are still sitting in my fridge} so I decided how hard could onion rings be too make? 


My initial idea was to make them like I would make my Fried Chicken and it turns out I was right! I used this recipe from All Recipes to guide me! 


First you peel and slice a large onion into rings. Once the rings are cut coat them in flour. 



Next combine the left over flour, 1 egg and milk then mix it all together

You can see the consistency that’s needed here. Not too thick but not too thin either! 



Next you want to coat the onion rings with this mixture. Put them on a cooling rack for the extra to drip off



In my case sometimes too much of the mixture dripped off so I would re coat it and quickly dip it in the bread crumbs! Here’s what they looked like all coated with the breadcrumbs: 

Once they’re all coated put them in your fryer! 

After about 5 minutes or once they’ve reached your desired color/crispiness take them out.



They were SO good. It just proves that everything home made is better! 


Homemade Onion Rings
Serves 2

Ingredients

  • 1 large onion, cut into rings 
  • 1 1/4 cups all-purpose flour
  • 1 egg
  • 1 cup milk, or as needed
  • Italian dry bread crumbs
  • 1 quart oil for frying, or as needed

Directions

1. Heat the oil in the fryer to approximately 350 degrees Fahrenheit.  

2. Peel and slice one large onion into rings. 
3. Place 1 1/4 all-purpose flour in a bowl and coat the onion rings with flour. 
4. Once all the onion rings are coated with flour, mix the flour and 1 beaten egg. 
5. Coat the onion rings with the flour and egg mixture. Place on a cooling rack to allow the excess coating to drip down. 
6. Once the excess coating has dripped off place the rings in the Italian bread crumbs and coat completely. 
7. Fry for 5-7 minutes or until your desired crispiness has been reached! 
8. Serve immediately or store in an air tight container in your fridge and reheat using your oven or a toaster oven!
